FAMOUS  RESTAURANT STYLE CRISPY MUSHROOM CHUKKA:

Welcome to crescent star kitchen today I am going to share an interesting recipe done in  a famous Pondicherry restaurant which is very famous in Pondicherry ,becomes all time favourite to customers and even I belongs to that category after having a bit of it.This is one of the best mushroom chukka I have ever tasted in my life .So,I got a chance to personally contact the chef and noted down .The process is very simple gives a tasty look and delicious on their own way.The plus point in this recipes is the mushrooms are finely coated with the batter and fried .This roasted mushrooms gives amazing taste and flavor to the gravy .Button mushrooms tastes like  a non- vegetarian and it sucks more chillies like a non veg ,make sure to add the masalas according to it.


HEALTH BENEFITS OF MUSHROOMS:

Nutritionist prefer to take mushrooms  twice a week as it helps to naturally boost the immunity level ,reduces the percentage of heart related diseases,easily gets digested,low in fat.It is more beneficial for the thyroid patients especially hypothyroidism for regulating thyroid hormone in regular basis as it is rich in proteins and micronutrients.It fights and reverses cancer and has more advantages ,cost effective than compared to other non vegetarians.

Mushrooms are the one that is most likely not favoured by veggies probably for their appearance after they are cooked. In 80’s ,90’s (olden ages) these mushrooms are rarely used and not much familiar ,it had the name ‘’Umbrella’’. Most of the people may not have any idea and knowledge about it in earlier times and have a wrong thought that the mushrooms must be brought from reliable sources as they are likely to absorb heavy metals ,toxins from the soil if not harvested in proper places.In European countries mushrooms are used as protein food.As India has lot of vegetables in it,mushrooms has become a very good protein diet nowadays. Mushrooms grew well in cool and dark places ,so it is very good to cultivate in hilly regions for getting better yield.   
HOW TO CLEAN MUSHROOMS:

Button mushrooms has to be put in bowl and sprinkle with some salt ,close and keep for some mins, mix it and get washed completely
Next method is to neatly wipe off every mushroom with soft tissue paper and rinse them.
Other method  is done by sprinkling some maida /all plain flour/wheat flour on the mushrooms and peel off the skin from bottom.
   These were simple method used for cleaning process .

CAUTION:
 
 If you directly clean  in running water for longer time mushrooms get torned into tiny pieces .On cooking time, perfection shaping of mushroom will be missed to avoid soggy .

LETS HAVE A LOOK ON HOW TO PREPARE THIS EASY AND INNOVATIVE WAY:

Quick and tricky crispy mushroom chukka,made by stir frying and spiced with garam masala and red chilli powder.Pairing well with Fulka/Chapathi,Roti,Rice or any breakfast preparation.

Serving Time 5mins

INGREDIENTS REQUIRED:

Button mushroom -200gm(sliced)

Onion –1(Large chopped)

Tomato -2(chopped)

Ginger garlic paste -1tsp

Green chilly -1or 2(finely chopped)

Oil –As required

Turmeric powder –1/4 tsp

Chilly powder –2 tsp

Garam masala  –1

Lemon  juice-1/2 tsp(optional)

Salt –As required

Pepper powder -4 tsp

Mint ,Coriander ,Curry leaves –For garnishing


FOR BATTER:
Corn flour –1 tbsp

Maida /All purpose flour–1 tbsp

Bread crums –As required

Chilli powder -2 tsp

Turmeric powder -1/4 tsp

Salt-1/4 tsp

Water





RECIPE MAKING PROCESS:

Now,we are going to see method of making  tempting recipe.

STEP 1:Take a bowl and marinate the neatly cleaned mushroom with corn flour,maida,salt,turmeric powder ,chilli powder and sprinkle some water mix it well, then let it rest for 20 mins.

STEP 2:Meanwhile chop onions and tomatoes and keep aside.

STEP 3:Take a kadai ,pour oil,add curry leaves for flavour and deep fry the step 1(marinated part)by dipping in bread crums and keep the fried mushroom aside.

STEP 4:To start making the masala for chukka, first keep pan add a teaspoon of oil put chopped onions,add ginger garlic paste after onion turns golden brown add chopped tomatoes  put salt accordingly,chopped green chilli ,coriander leaves and sauté them.

STEP 5:Add little turmeric powder,chilli powder,garam masala ,then add the fried mushroom give a light stir .

STEP 6:Last step before swiching off the stove, sprinkle with pepper powder.last but not least squeeze with little lemon juice and garnish with coriander leaves .
THAT’S IT MUSHROOM CHUKKA IS READY TO SERVE WITH HOT STEAMED RICE,SIDEDISH,DOSA,FULKA,
